Lemon Meringue Pie

Ingredients

  • 1 c. plus 1 Tb. sugar
  • 3 Tb. cornstarch
  • 4 Tb. lemon juice
  • 1/4 tsp. salt
  • 3 egg yolks
  • 1-1/2 c. boiling water
  • 1 tsp. butter
  • 3 egg whites
  • 1/4 tsp. cream of tartar
  • 1/4 tsp. salt
  • 1/4 tsp. vanilla
  • 6 Tb. sugar

Directions

  1. Filling is ingredients 1 thru 7:

  2. Mix 3 egg yolks plus lemon juist with dry ingredients. Pour 11/2 c. boiling water over dry ingredients and cook until thick. Add a little butter. Pour into 9" pie crust.

  3. For the meringue, use remaining ingredients:

  4. Egg whites must be at room temperature. Combine whites, cream of tartar, salt, and vanilla in deep, narrow bowl. Beat at medium speed until frothy. Add sugar a little at a time, beating well after each addition.

  5. Put meringue on top of pie filling, making sure you seal it well around the edges. Brown at 425 or 450 for a few minutes.
