Lemon Poppy Seed Cake

Ingredients

  • Cooking Spray
  • 3/4 c. plain yogurt
  • 3 eggs
  • 1 c. nature sweet crystals
  • 1/2 tsp vanilla extract
  • 1 tbs. finely grated lemon zest
  • 3/4 c. flour
  • 3/4 c. almond flour
  • 2 tsp baking powder
  • 1/8 tsp salt
  • 1 tbs poppy seeds
  • 1/4 c. oil
  • Glaze
  • 1/4 c. fresh lemon juice
  • 1/3 c. nature sweet powdered sugar

Directions

  1. Pre heat oven to 350 degrees. Coat a 9 in cake pan with cooking spray and set aside.

  2. In a large bowl whisk together the yogurt, eggs, nature sweet, vanilla, and lemon zest. In another bowl combine the flour, almond flour, baking powder, salt, and poppy seeds. Whisk into the yogurt mixture just until blended. Whisk in the oil until combined. Pour into the prepared pan and bake for 30-35 minutes or until tester comes out clean. Cool on a wire rack.

  3. In a small bowl stir together the lemon juiced and nature sweet powdered sugar . While cake is warm brush glaze over the cake. Cool completely.
