Slow Cooker Mexican Pork

Ingredients

  • 1 lb boneless pork loin cut into 1 inch pieces
  • 2 1/4 cups salsa (from 24 oz jar)
  • 1 can chopped green chilies drained
  • 1 can black beans drained and rinsed
  • 1 c. shredded monterey jack cheese (4 oz) if desired

Directions

  1. In 3 1/2 to 4 quart slow cooker mix pork, salsa and chilies.

  2. Cover, cook on low heat setting 6-8 hours

  3. Stir in beans. Cover and cook on low heat setting for about 5 minutes until beans are hot. Sprinkle with cheese.
