Scallops Florentine

Ingredients

  • 1 pound sea scallops
  • 3 tbsp. butter
  • 2 tbsp. all purpose flour
  • 1 cup heavy cream
  • 1/2 cup grated Paremsan cheese
  • salt to taste
  • ground black pepper to taste
  • 1 (10 oz.) package frozen chopped spinach, thawed
  • 1 cup shredded mozzarella
  • 1/4 cup grated Parmesan
  • 1/4 cup plain bread crumbs
  • 1 tbsp. Old Bay Seasoning

Directions

  1. eat oven to 350. Lightly grease a 9 inch pie plate.

  2. Rinse the scallops and pat dry. Place on the bottom of the prepared pie plate.

  3. In a small saucepan, melt the butter, and stir in the flour. Cook over low heat for 3 minutes. Whisk in heavy cream and 1/4 cup Parmesan. Season with salt and pepper to taste. Cook another 2-3 minutes, stirring constantly or until thick.

  4. Squeeze the spinach dry, and spread over the scallops. Pour ceam sauce over spinach and top with mozzarella, 1/4 cup Parmesan and bread crumbs. Sprinkle Old Bay Seasoning over top of bread crumbs.

  5. Bake for 15 minutes until browned and bubbly.
