Roasted asparagus with balsamic browned butter

Serves 6 people

Ingredients

  • 40 spears of asparagus, trimmed (about 2 lbs)
  • cooking spray
  • 1/4 tsp kosher salt
  • 1/8 tsp black pepper
  • 2 T butter
  • 2 tsp low-sodium soy sauce
  • 1 tsp balsamic vinegar

Directions

  1. Preheat over to 400 degrees F.

  2. Arrange asparagus in a single layer on baking sheet; coat with cooking spray.

  3. Sprinkle with salt and pepper. Bake at 400 for 12 minutes or until tender.

  4. Meanwhile, melt butter over medium heat; cook for 3 minutes or until lightly browned, shaking pan occasionally.

  5. Remove from heat; stir in soy sauce and vinegar.

  6. Drizzle over cooked asparagus, tossing well to coat. Serve immediately.
