Melon in Coconut milk

Ingredients

  • 14oz unsweetened coconut milk, well-stirred
  • 3 tablespoons sugar
  • 1 1/2 teaspoons fresh lime juice, or to taste
  • 1 large honeydew melon, chilled

Directions

  1. Stir together coconut milk, sugar and lime juice in a small metal bowl until sugar is dissolved. Quick chill by setting into a second larger bowl of ice and water, stirring occasionally, for six minutes.

  2. Scoop melon into balls and put in serving dishes. Pour coconut mixture over the top.
