Baked Salmon with Avocado Mayonnaise

Ingredients

  • 1 tablespoon brown sugar
  • 2 teaspoons paprika
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili powder
  • 1 salmon, filet
  • olive oil
  • 1 cup mashed avocado
  • 1 tablespoon lemon juice, fresh
  • 6 tablespoons mayonnaise

Directions

  1. Preheat broiler. Combine sugar, paprika, salt, cumin, black pepper and chili powder.

  2. Rinse fish and pat dry. Place fish, skin side down, in a broiler pan. Brush top with olive oil and sprinkle evenly with brown sugar mixture. Broil 5 inches from heat for about 2 minutes or until sugar mixture begins to caramelize.

  3. Turn oven to bake and cook for 8-12 minutes or until fish flakes with a fork.

  4. Mash avocado, lemon juice and mayo until very smooth. Cover and chill until ready to serve.

  5. Can sub red fish filets.
