Eye of Round

Ingredients

  • 4 pounds eye of round roast
  • Salt and pepper to taste
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 teaspoons garlic, minced
  • 2 Tablespoons butter
  • 2 Tablespoons flour
  • 1 can (8-ounce) tomato sauce
  • 2/3 cups beef broth
  • 1 can (3.8-ounce) black olives, sliced and drained

Directions

  1. Slice roast diagonally in ¾ inch slices; sprinkle each slice with salt and pepper.

  2. Sauté onion, bell pepper, and garlic in butter until soft. Blend in flour; add tomato sauce, both and olives.

  3. Bring to almost boiling. Place meat on heavy duty aluminum foil in shallow baking pan.

  4. Pour sauce over; seal foil well, and bake at 350°F for 3 ½ hours.
