Spicy Szechuan Noodles

Ingredients

  • 1 lb. thick spaghetti noodles or linguine
  • 6 oz shredded cooked chickn or pork
  • 2 oz roasted cashews or peanuts (optional)
  • for dressing:
  • 4 chopped scallions
  • 2 Tbsp chopped cilantro
  • 2 tsp garlic-chili sauce
  • 2 Tbsp peanut butter
  • 2 Tbsp sweet chili sauce
  • 3 Tbsp soy sauce
  • 2 Tbsp sherry or rice vinegar
  • 2 Tbsp sesame oil
  • 2 Tbsp chicken broth or water
  • Lots of freshly ground pepper

Directions

  1. Cook noodles

  2. While noodles are cooking, combine all ingredients for dressing and mix together.

  3. Add noodles, shredded meat, and nuts to dressing, toss to coat.
