Salmon w/ brown butter, almonds and green beans

Ingredients

  • 4 T unsalted butter
  • 1 1/4 pounds salmon fillet cut into 4 pieces
  • salt and pepper
  • 1 pound green beans, trimmed and halved crosswise
  • 1/4 cup sliced almonds
  • 2 T capers

Directions

  1. Heat 1 T of the butter in a large nonstick skillet over medium heat

  2. Season salmon with 1/2 t salt and 1/4 t with pepper

  3. Cook until opaque throughout, 3 to 5 minutes per side and transfer to plates

  4. Fill a second skillet with 1/2 inch of water brunt to boil and add 1/4 t salt

  5. Add green beans, cover and steam until tender, 4 to 5 minutes; drain and transfer to plates

  6. Wipe out green bean skillet and heat the remaining 3 T of butter over medium heat

  7. Add almonds and cook stirring frequently until the almonds and butter are golden brown, 2 to 3 minutes

  8. Stir in capers

  9. Spoon over fish and green beans
