Paprika spiced pork chops with spinach saute

Ingredients

  • 1 T olive oil
  • 4 bone-in pork chops (about 1 inch thick, 2 pounds total)
  • 1 t paprika
  • salt and pepper
  • 4 scallions, sliced
  • 1/4 cup golden raisins
  • 1 10-oz package spinach
  • 1 T fresh lemon juice

Directions

  1. Heat oven to 400°

  2. Heat oil in large skillet over medium heat

  3. Season pork with paprika, 1/2 t salt, and 1/4 t pepper and cook until browned, 2 to 3 minutes per side

  4. Transfer pork to a baking sheet and roast in oven until cooked through, 10 to 12 minutes

  5. Meanwhile, return the skillet to medium heat, add scallions and raisins and cook, stirring for 30 seconds

  6. Add spinach and 1/4 t salt and pepper and cook, tossing until just wilted, 1 to 2 minutes

  7. Stir in lemon juice

  8. Serve with pork
