Fresh Salsa

  • 1 to 3 fresh hot green chili pepper, seeded and chopped
  • 1 garlic clove
  • 1/2 red onion, chopped
  • 3 chopped scallions
  • 1/2 cup fresh cilantro
  • 1 1/2 pounds ripe tomatoes, seeded and chopped coarsely
  • 1 Tbsp olive oil
  • 2 Tbsp fresh lime or lemon juice
  • 1/2 tsp salt, or to taste
  • 2 Tbsp tomato juice or water


  1. Combine chilis, garlic, red onion, scallion, and cilantro in the food processor, process until all is finely chopped.

  2. Add tomatoes, olive oil, lime or lemon juice, salt and tomato juice or water. Pulse on and off until everything is chopped. Salsa should be chunky.
