Enchilada Pie

Ingredients

  • 2 lbs ground beef
  • 1 medium onion, finely chopped
  • 1/2 teaspoon garlic powder
  • 1 (8 ounce) cans tomato sauce
  • 2 cups canned whole tomatoes, chopped
  • 1 (4 ounce) cans chopped green chilies
  • 1 (1 1/2 ounce) packages taco seasoning mix
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon chili powder
  • 1 (14 ounce) packages corn tortillas
  • 1 (10 1/2 ounce) cans cream of chicken soup
  • 3/4 cup milk
  • 2 cups shredded cheddar cheese

Directions

  1. In a large skillet, mix together ground beef, onion and garlic powder.

  2. Cook over medium heat until meat is browned.

  3. Drain excess fat.

  4. Add next 7 ingredients.

  5. Cook 5 minutes, stirring occasionally.

  6. Tear each tortilla into 8 pieces.

  7. Place half of tortilla pieces in oblong baking pan.

  8. Top with meat mixture.

  9. Place remaining tortilla pieces evenly over meat mixture.

  10. Mix together soup and milk.

  11. Pour over tortillas; spread evenly.

  12. Sprinkle cheese evenly over top.

  13. Bake at 350 degrees for 45 minutes.
