Salad Nicoise

Serves 4 people

Ingredients

  • Vinaigrette
  • 1 t salt
  • 1/3 c red wine vinegar
  • 1 c olive oil
  • 2 T capers
  • 2 t anchovy paste
  • 2 t parsley
  • Salad
  • 1 lb green beans
  • 2 lbs small potatoes
  • 1 head lettuce
  • 2 large tomatoes
  • 1/2 c olive oil
  • 4-6 hard boiled eggs
  • 1 can tuna

Directions

  1. Blanch green beans, boil/steam potatoes

  2. While warm, cut potatoes into wedges- mix with 1/4-1/2 c vinaigrette and chill

  3. Prepare rest of salad, add eggs, green beans and potato-vinaigrette mixture
