Lentil Bolognese

Serves 3 people

Ingredients

  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • 2 carrots, coarsely grated
  • 2 celery stalks, chopped
  • 3 T olive oil
  • 2/3 c red lentils
  • 1 14oz can of tomatoes, chopped
  • 2 T tomato paste
  • 2 c veggie stock
  • 1 t dried marjoram
  • salt & pepper

Directions

  1. In a large saucepan gently saute the onion, garlic, carrots and celery in the oil for 5 mins, until soft

  2. Add lentils, tomatoes, paste, stock marjoram and seasonings

  3. Bring to boil, then partially cover w/ lid and simmer for 20 mins, until thick and lentils are soft.
