Raspberry Scones

Also works with egg, instead of yogurt/baking soda mixture (4 eggs)

Ingredients

  • 1 cup soy yogurt
  • 1 t baking soda
  • 1/2 t vanilla extract
  • 4 cups flour
  • 3/4 cup sugar
  • 2 t baking powder
  • 3/4 t salt
  • 3/4 cup vegan butter
  • 3/4 chocolate chips
  • about 1/2 cup raspberries

Directions

  1. In a small bowl mix soy yogurt, baking soda, and vanilla. Set aside.

  2. In a large bowl combine flour, sugar, baking powder, and salt, then cut in the butter into the dry mixture until it forms small crumbs. Mix in the chocolate chips.

  3. Add the yogurt mixture into the large bowl and combine- knead it to get all the crumbs in there

  4. Divide dough in half and on a lightly floured surface, pat each half into a rectangle, and scatter the raspberries across the surface.

  5. Fold and cut into triangles

  6. Bake on lightly greased sheet at 350 for 15-20 mins
