Sicilian Peperonata and Olive Polenta

Ingredients

  • polenta roll
  • 1 T olive oil
  • 1/2 c chopped onion
  • 4 large tomatoes, chopped
  • 1 T red wine vinegar
  • jar of roasted red peppers, chopped
  • 1/3 cup Kalamata olives, chopped
  • 1/4 c fresh basil, chopped

Directions

  1. Preheat oven to 500. Bake polenta, lightly brushed with oil for 14 mins, flipping them half way through

  2. Heat 2 T oil over medium heat, add onions and saute for 3 minutes.

  3. Add tomatoes and vinegar. Cook until tomatoes soften

  4. Add rest of ingredients, and simmer for 2 mins.

  5. Spoon over polenta and serve hot
