Butterfinger Cookies

Ingredients

  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 2/3 cup brown sugar, firmly packed
  • 2 large egg whites
  • 1 1/4 cups chunky peanut butter
  • 1 1/2 teaspoons pure vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 5 (2 1/8 ounce) butterfinger candy bars, chopped

Directions

  1. Preheat oven to 350°F degrees.

  2. In a mixing bowl, cream butter and sugars. Add egg whites; beat well.

  3. Blend in peanut butter and vanilla.

  4. Combine flour, baking soda and salt; add to creamed mixture and mix well.

  5. Stir in candy bars.

  6. Shape into 1 1/2-inch balls and place on a baking sheet.

  7. Bake at 350° for 10-12 minutes, or until cookies just start to turn brown.

  8. Do not over bake!

  9. Let sit on cookie sheet for a few minutes, before transfering to a wire rack.

  10. Cool completely.
