Baked Vegetable Spring Rolls

Ingredients

  • Cabbage
  • Bean Sprouts
  • Carrot
  • Spring Onions
  • Rice Noodles
  • Cashew Nuts
  • Oil
  • Ginger
  • Soy Sauce
  • Cornstarch (tblsp)
  • Water
  • Spring Roll Wraps
  • Sweet Chilli Dipping Sauce

Directions

  1. Shred cabbage and carrots. Grate ginger, chop onions and roughly chop cashew nuts.

  2. Cook rice noodles until just shy of “al dente”.

  3. With a little oil, fry the cabbage, carrots, sprouts, ginger and cashes nuts until tender.

  4. Mix cornstarch with water and add to the pan with soy sauce and onion.

  5. Cook until the sauce thickens, add the rice noodles and stir through.

  6. Remove from the heat leaving to cool.

  7. Fill a wrap and fold together and place on a greased baking sheet.

  8. Bake at 205oc for 10 mins. Flip and cook for further 5 min or until golden brown. Serve with sweet chilli dipping sauce.
