Potato/Courgette Omelette

Don’t over salt the eggs or vegetables when cooking and cook on a very low heat very slowly! Yum!

Prep time: 15 minutes
Cook time: 10 minutes
Serves 3 people

Ingredients

  • Diced Onion
  • Potatoes/Courgette
  • 6 Eggs
  • Salt
  • Pepper

Directions

  1. Courgette:

  2. Crack 6 eggs, separating the yolks from four of them. Beat together the 2 whole eggs and 4 egg whites with a little salt and pepper.

  3. In a pan with a little oil, fry the onion. Season with a little salt.

  4. Remove onion and fry courgette till tender with a little salt.

  5. When tender mix onion and courgette together.

  6. On a medium heat add the egg mixture and leave to cook for a little.

  7. When bottom half is cook flip over and cook on the other side.

  8. Potato:

  9. Crack 6 eggs, separating the yolks from four of them. Beat together the 2 whole eggs and 4 egg whites with a little salt and pepper.

  10. Dice the potato and boil until slightly hard.

  11. Fry onion until tender.

  12. Remove onion and in a HOT pan fry until brown and cooked.

  13. Add onion and egg mixture and cook until brown. Flip and cook.
