Fennel, feta and olive tart

Ingredients

  • 1 small fennel bulb, thinly sliced
  • 1/2 cup pitted kalamata olives, halved
  • 1 T olive oil
  • 1 cup crumbled feta (4 oz)
  • 1 sheet frozen puff pastry (half of a 17.3 oz package) thawed and cut into 4 squares

Directions

  1. In a bowl, toss the fennel and olives with the oil and 1/4 t pepper

  2. Place the pastry squared on a baking sheet and top with fennel mixture and feta

  3. Bake at 400° until golden brown and crisp, 22 to 25 minutes
