Baked Oatmeal

Ingredients

  • 1/2 C Applesauce
  • 3/4 C Sugars (brown & white mixed)
  • 2 Eggs (may use egg whites)
  • 3 C quick-cook oats
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. cinnamon
  • 1 C milk
  • 1 tsp. vanilla

Directions

  1. Mix together all dry ingredients. The more brown sugar you use, the less white sugar you need, and the less sugar you actually need to use. I usually do a heaping 1/2 C brown sugar plus a dash or so of white.

  2. Stir to combine, and then store in an airtight container until morning (you can mix it up in the morning, but I find it easier to get the dry ingredients ready the night before).

  3. In the morning, mix together eggs (lightly beaten), applesauce and vanilla. I use 1 egg, and 1-2 egg whites.

  4. Then add the milk and stir to combine.

  5. Add in wet ingredients to the dry ones and stir until moist.

  6. Pour the mixture into a greased 9×9 pan and sprinkle the top with cinnamon, if you wish.

  7. Bake at 350 for 30 minutes, or until golden brown.
