Taco Lasagna

Ingredients

  • 1 lb ground beef
  • 1/2 c chopped onion
  • 1 envelope taco mix
  • 1 can diced tomatoes
  • 6 flour tortillas
  • 3 c shredded cheese
  • 1/2 c green pepper, chopped
  • 2/3 c water
  • 1 can black beans, rinsed & drained
  • 1 can refried beans

Directions

  1. In a large skillet, cook the beef, green pepper and onion over medium heat until meat is no longer pink; drain. Add water & taco seasoning, bring to boil. Reduce heat; simmer, uncovered for 2 minutes. Stir in the black beans & tomatoes. Simmer for 10 min, uncovered.

  2. Place 2 tortillas in an ungreased 9×13 baking dish. Spread with 1/2 of the refried beans & beef mixture; sprinkle with 1 c cheese.

  3. Repeat layers. Top with remaining tortillas and cheese.

  4. Cover and bake at 350 for 25-30 minutes or until heated through & cheese is melted.
