Tomato Garlic Chicken

Ingredients

  • 3-4 garlic cloves, minced
  • 1 tsp salt
  • 5 medium red potatoes, 1/4" slices
  • 5 tbsp olive oil, divided
  • 1 large onion, thinly sliced
  • 1 (3-4lb) broiler/fryer chicken, cut up
  • 2 medium tomatoes, chopped
  • 1 tbsp minced fresh basil

Directions

  1. In a large bowl, combine garlic, & salt; let stand for 15-20 minutes. Add potatoes and 2 tbsp oil. In a greased 9×13 baking dish, layer potato mixture, onion, chicken and tomatoes. Sprinkle with basil. Drizzle with remaining oil.

  2. Cover and bake at 350 for 1 hour. Uncover and bake 15-20 minutes longer or until chicken juices run clear and potatoes are tender.
