Pork Chops in Spanish Rice

Cook time: 60 minutes
Serves 5 people

Ingredients

  • 5 pork chops (1/2 inch thick)
  • 2 T shortening
  • 1 tsp salt
  • 1/2 tsp chili powder
  • dash pepper
  • 3/4 c uncooked long-grain rice
  • 1/2 c chopped onion
  • 1/4 c chopped green pepper
  • 1 can tomatoes (28 oz)
  • 5 green pepper rings
  • 2 oz. sharp process American cheese (1/2 c)

Directions

  1. Trim excess fat from chops

  2. In skillet slowly brown pork chops in melted shortening – aprox. 15-20 minutes

  3. Drain excess fat

  4. Combine salt, chili powder, and papper

  5. Sprinkle over meat

  6. Add rice, onion and chopped green pepper

  7. Pour tomatoes over

  8. Cover and cook over low heat 35 minutes, stirring occasionally

  9. Add green pepper rings and cook till rice and meat are tender, 5 minutes

  10. . Sprinkle with cheese
