Potato Pancakes with Applesauce (Kartoffelpuffer mit Apfelmus)

Medium heat seemed way too low to cook them. If you want a crispier pancake use a higher heat.

Ingredients

  • 6 potatoes
  • 2 eggs
  • 1/4 onions, grated
  • 1/3 c. flour
  • 1 tsp. salt
  • bacon fat or lard
  • applesauce

Directions

  1. Peel potatoes and drop into cold water.

  2. In mixing bowl, add eggs, onions, flour, and salt.

  3. Dry potatoes and grate coursely into colander and press down to squeeze out as much water as possible.

  4. Stir in egg and onion batter.

  5. Add lard into a skillet over medium heat. Once warm, add potato mixure and flaten into pancakes. Cook until golden brown.

  6. Serve with applesauce.
