Hjónabandssæla

Traditional Icelandic cake. Jam is usually rhubarb but could use any. The name means “Wedded bliss”.

Cook time: 30 minutes
Serves 8 people

Ingredients

  • 200 g butter
  • 170 g oatmeal
  • 170 g flour
  • 100 g sugar
  • 1 tsp baking soda
  • 1/2 jar rhubarb jam

Directions

  1. Rub butter into the dry ingrediants.

  2. Press about 2/3 of the mixture into the bottom of a round cake tin.

  3. Spread with the jam.

  4. Sprinkle rest of mixture over.

  5. Bake at 200°C until jam begins to bubble through the topping.
