Grilled Shrimp w/ Lemon Potato Salad and Grilled Asparagus

Ingredients

  • 1 lb red potatoes
  • 1/4 cup sour cream
  • 2 tbsp lemon juice
  • 4 stalk celery (chopped finely)
  • 2 tbsp chives (chopped finely)
  • 1/2 lb asparagus
  • 2 tbsp olive oil
  • 1 1/2 lbs shelled and deveined shrimp
  • 1 tbsp seafood seasong (Old Bay)

Directions

  1. Place the potatoes in med. pot, add enough cold water. Bring to a boil and add 2 tsp salt.

  2. Reduce heat and simmer until tender (12-15 mins).

  3. Drain, run under cold water and cut into quarters.

  4. In med. bowl whisk together sour cream, lemon juice, 3/4 tsp salt, 1/4 tbsp pepper.

  5. Add potatoes, celery, chives and toss.

  6. Heat grill to med-high

  7. In second bowl toss asparagus with 1 tbsp of oil and 1 tsp each of salt and pepper

  8. In third bowl toss the shrimp with seafood seasong and remaining tbsp of olive oil.

  9. Grill asparagus turning occasionally, until tender (6-8 mins)

  10. Grill the shrimp until opaque (see through) throughout (1-2 mins per side).

  11. Serve shrimp, asparagus and the potato salad and enjoy
