Crab Cakes w/ Roasted Garlic Mayo

Ingredients

  • 2 stalks of celery (chopped)
  • 4 scallions (white parts thinly sliced)
  • 2 lbs crab meat (cooked)
  • 2 cups mayo
  • 3 cups bread crumbs
  • 1 tbsp olive oil
  • 4 tbsp butter
  • 4 tbsp vegetable oil
  • 1 head garlic
  • 1 tbsp lemon juice

Directions

  1. Preheat oven to 350F

  2. Seperate garlic cloves and place into baking dish, drizzle with oil.

  3. Roast until soft (35 mins) and let cool in the pan.

  4. Lower temp to 200F, peel garlic and add lemon juice and mash together with a fork.

  5. Stir 1/2 cup mayo into mashed garlic

  6. Mix celery, scallions, crabmeat, remaining mayo and 2 1/2 cups bread crumbs (season with salt and pepper to taste).

  7. Place extra bread crumbs on wax paper and form 1" thick patties.

  8. Melt butter with veg. oil in large skillet and fry the patties until golden brown
