OVEN-FRIED PAPRIKA CHICKEN

Ingredients

  • 1/2 cup plain fatfree yogurt
  • 1 tbsp sweet paprika, divided
  • 15 saltine crackers, crushed
  • 1 tsp salt
  • 1/4 tsp freshly ground pepper
  • 1 lb uncooked boneless, skinless 4 oz. chicken breast
  • 1 tbsp chopped fresh parsley
  • 1/2 medium lemon, cut into 4 wedges

Directions

  1. Preheat broiler, coat a baking sheet w/cooking spray.

  2. Place yogurt and 1 tsp of paprika in a small shallow bowl, mix to combine.

  3. Combine cracker crumbs, salt, pepper, and remaining 2 tsp of paprika on a large shallow pie plate, stir to combine.

  4. Place each chicken cutlet in yogurt mixture and turn to coat.

  5. Place chicken in crumb mixture, turning to coat both sides and pressing lightly.

  6. Place coated chicken on prepared baking sheet and lightly spray w/cooking spray.

  7. Broil 3 to 4 inches from heat source until golden brown and cooked thru, flipping once, about 5 minutes per side.

  8. Sprinkle w/parsley and garnish w/lemon wedges.
