English Muffin bread

This breakfast loaf is sure to cause a stir. It’s virtually fail proof.

Ingredients

  • 5 1/2 cups flour, divided
  • 2 packages yeast or 4 1/2 tsp yeast
  • 2 tsp salt
  • 1/4 tsp baking soda
  • 2 cups milk
  • 1/2 cup water
  • cornmeal

Directions

  1. In a bowl, combine 3 cups flour, the yeast, sugar, salt, and baking soda.

  2. In a saucepan, heat the milk and water until hot, then pour them into the flour mixture.

  3. Beat with a wooden spoon until well combined.

  4. Stir in more flour, enough to make a stiff batter.

  5. Spoon the batter into two well-greased loaf pans sprinkled with cornmeal.

  6. Cover and let rise in a warm place for 45 minutes.

  7. Bake for 25 minutes (or until done) in a preheated oven at 400 degrees F.

  8. Remove from pans immediately.

  9. Serve toasted.
