Stuffed Chicken Breasts

Ingredients

  • 1 tbs snipped dried tomatoes 9not oil packed)
  • 4 boneless chicken breast halves
  • 1/4 cup feta cheese
  • 2tbs softened cream cheese
  • 2 tsp fresh snipped basil
  • black pepper
  • 1 tsp olive oil

Directions

  1. Place tomatoes in a small bowl and pour enough boiling water over tomnatoes to cover; let stand for 10 minutes and pat dry. Cut a pocket in each breast. In small bowl, combine feta, cream cheese, basil and tomatoes. Spoon mixture equally in the pockets. Sprinkle chicken with pepper. Cook chicken in skillet o ver med high heat for 12 to 14 minutes, or until tender and no longer pink, turning once,
