Madras Lentils over Potatoes

So, this isn’t a real homemade recipe but the point of having these recipes are to organize my daily meals and this is one of them! This is delicious, fast, and healthy. You can buy these boxes in bulk at Costco as well so they’re affordable too.

Prep time: 3 minutes
Cook time: 2 minutes
Serves 2 people

Ingredients

  • Madras Lentils
  • Red or All purpose baked potatoes
  • Cheese
  • Sour cream

Directions

  1. Heat package of madras lentils (about 2 min.)

  2. Serve over baked potatoes (You can bake or boil them which of course will add some time to this recipe, but if you’re in a real time crunch pick some potatoes up from Wendy’s!

  3. Add cheese and sour cream.

  4. Serve with a salad.
