Mom’s Broccoli and Cheese Casserole

Yummy holiday casserole!

Cook time: 45 minutes
Serves 8 people

Ingredients

  • 2 packages of frozen broccoli; microwave each 5-7 minutes each
  • 2 eggs
  • 1 package cheddar cheese
  • 1 cup of mayo (Hellmann’s light)
  • 1 can cream of mushroom soup
  • 1 tube of Ritz cracker crumbs
  • Pats of butter

Directions

  1. Cook broccoli; beat eggs

  2. Add mayo, cream of mushroom soup, and cheese; add broccoli

  3. Put mixture in a casserole dish; spread cracker crumbs on top

  4. Add pats of butter to the crackers

  5. Bake at 325 for 45 minutes
