Angel Cakes

Ingredients

  • 1 cup flour
  • 1 3/4 cups sugar
  • 1/2 teaspoon salt
  • 14 egg whites
  • 1 1/2 teaspoon cream of tartar
  • 2 teaspoons vanilla
  • 3/4 teaspoon lime oil
  • 1 cup sliced strawberries

Directions

  1. Preheat oven to 375

  2. Combine flour with 1 1/4 cups of sugar and set aside

  3. Beat egg whites till firm and add cream of tartar and 1/2 cup sugar and continue beating until stiff peaks form.

  4. Beat in vanilla and lime oil.

  5. Fold in dry ingredients 1/3 at a time.

  6. Spread into muffin tins, leaving the middle 2 empty.

  7. Bake for 15-20 minutes

  8. Invert over 2 glasses to cool

  9. Remove from pan.

  10. Top with sliced strawberries to serve.
