Chunky Banana Muffins

Ingredients

  • 1 1/2 cup flour
  • 1 cup whole wheat flour
  • 1/2 cup wheat bran
  • 3/4 cup brown sugar
  • 1 1/2 tsp baking powder
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup veg oil
  • 2 eggs
  • 1/2 cup buttermilk (or 1/2 tbsp vinegar or lemon juice and 1/2 cup milk)
  • 1 tsp vanilla
  • 1 cup mashed ripe banana
  • 1 cup diced banana
  • 3/4 cup granola

Directions

  1. Use this granola recipe or other granola.

  2. Combine flours, bran, sugar, baking powder, baking soda and salt.

  3. Combine oil, eggs, buttermilk and vanilla.

  4. Stir in mashed bananas.

  5. Add wet to dry and stir until just combined.

  6. Stir in bananas and granola.

  7. Spoon batter into 12 muffin cups.

  8. Sprinkle with extra granola if desired.

  9. Bake 350 for 25 – 30 minutes until golden and firm to touch.
