Amigdalopita

Ingredients

  • 4 eggs, separated
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1/2 cup sweet butter, melted
  • 1/2 teaspoon cream of tartar
  • 2 cups cake flour
  • 3 teaspoons baking powder
  • 1 cup blanched almonds
  • 1 cup of honey
  • 1 cup of water
  • 1 1/2 cup sugar

Directions

  1. Preheat oven to 350

  2. Boil the syrup in advance (10 minutes) on low heat and let it cool completely

  3. Beat egg whites until stiff

  4. Blend egg yolks, sugar and vanilla

  5. Add warm butter

  6. Fold yolk mixture into beaten egg whites

  7. Sift dry ingredients and add to mixture.

  8. Stir in nuts

  9. Bake for 40 minutes

  10. Remove from oven and douse with cold syrup
