Apple Pancakes

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup sugar
  • 2 cups buttermilk
  • 2 large eggs
  • 2 tablespoons butter, melted
  • 1 large granny smith apple, peeled and chopped

Directions

  1. Combine first 4 ingredients in a large bowl, and make a well in the center.

  2. Stir together buttermilk, eggs, and melted butter.

  3. Add to dry ingredients, stirring just until moistened.

  4. Fold in chopped apple.

  5. Pour 1/4 cup batter for each pancake onto a hot, lightly greased griddle.

  6. Cook until tops are covered with bubbles and edges look cooked; turn and cook other side.
