Bean Soup

Ingredients

  • 1 cup chopped onion
  • Olive oil
  • 2 cups white beans (soak in water overnight - drain and rinse)
  • 8 cups water
  • 2 cloves of garlic pressed
  • 1 cup chopped celery
  • 2 carrots, chopped
  • 2 Tablespoons parsley
  • Salt and pepper
  • 1 Tablespoon flour
  • 15 oz. tomato sauce

Directions

  1. In a large pot, saute onion and garlic in the oil for about 5 minutes.

  2. Add 8 cups of water and bring to a boil (Keep adding water as necessary)

  3. Add beans and cook for 2 hours, stirring occasionally

  4. Add celery, carrots and parsley and cook for another 1/2 hour.

  5. Add salt, pepper and tomato sauce

  6. Mix flour and water and add to soup
