Asian Salmon Burgers

Ingredients

  • 1 lb salmon fillet, skin removed and picked over for bones
  • 1 large egg
  • 1 tablespoon soy sauce or 1 tablespoon low sodium soy sauce (if you are salt-sensitive)
  • 1 tablespoon minced fresh ginger
  • 1/2 cup panko
  • 1 -2 teaspoon chopped chives
  • 2 tablespoons chopped red onions
  • 1 tablespoon fresh lemon juice
  • sea salt, to taste
  • pepper, to taste
  • Ginger Lemon Sauce:
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1 tablespoon minced fresh ginger
  • 1 tablespoon fresh lemon juice
  • 1/4 cup soy sauce or 1/4 cup low sodium soy sauce
  • 1/2 teaspoon sugar

Directions

  1. To make Ginger Lemon Sauce: add all the ingredients to the container of a food processor; pulse until mixture is smooth; set aside.

  2. To make burgers: cut the salmon fillet into 1/2 inch cubes; set aside.

  3. In a large bowl, combine the egg, soy sauce, and ginger using a whisk.

  4. Add in the salmon cubes, panko, chives, onion, and lemon juice; season with salt and pepper to taste.

  5. Mix, using a wooden spoon, until the ingredients are evenly distributed.

  6. Take mixture and shape into 4 flat patties.

  7. Lightly coat each patty with vegetable oil cooking spray.

  8. Grill over medium heat for about 5 minutes on each side or until done; turn carefully to prevent breaking.

  9. Serve burgers on sesame rolls and top with Ginger Lemon Sauce.

  10. Use extra sauce for dipping if desired.
