Buckwheat Blini

Ingredients

  • 3 eggs
  • 1/2 cup flour
  • 1/3 cup buckwheat flour
  • 1/2 tsp salt
  • 1/2 tsp pepper (optional)
  • 1 tbsp veg oil
  • 3/4 cup milk

Directions

  1. Beat eggs, flours, salt (and pepper if using), oil and milk. Should be like yogurt. If it’s too thick, add more milk.

  2. Heat nonstick pan to meduim-high.

  3. Drop by tablespoons full to make 2 inch pancakes.

  4. Can use this recipe for crepes by using 1 1/4 cups milk instead of 3/4 cups milk.
