Apricot White Chocolate Cereal Bars

Ingredients

  • 1 3/4 c quick cooking oats
  • 1 2/3 c rice krispies
  • 1/3 c chopped dried apricots (about 6)
  • 1/2 c chopped pecans (optional)
  • 7 tbl butter
  • 1/3 c golden syrup
  • 1/3 c (or more) white chocolate chips
  • pinch of salt

Directions

  1. Combine oats, rice krispies, apricots, and pecans in a mixing bowl. Put butter, syrup, white chocolate, and salt in large saucepan and heat gently, stirring occasionally, until melted together. Stir the oat and Rice Krispies mixture into the melted chocolate mixture until well coated. Press the mixture into a shallow 11×7 inch pan lined with parchment paper, using a potato masher. Place in fridge for about 2 hours to set, then cut into bars. Store in airtight container in the fridge.
