Black Bean and Corn Hummous

Ingredients

  • 1 19 oz/540 ml can black beans, rinsed
  • 2 tsp ground cumin
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp chipotle pureed or 1 jalepeno, finely chopped
  • 2 tbsp yogurt cheese or mayo
  • 1 cup cooked corn
  • 1/4 cup fresh cilantro
  • salt
  • pepper

Directions

  1. In food processor, puree beans, cumin, olive oil, lemon juice, pepper and yogurt cheese until smooth.

  2. Add corn and either stir or puree it in.

  3. Add 1/2 cilantro.

  4. Season with salt and pepper.
