Curried Cheese Pate

Ingredients

  • 2 (8 oz) pkg cream cheese, softened
  • 2 cups grated sharp cheddar cheese
  • 6 tbl. Sherry
  • 2 tbl. worcestershire sauce
  • 1 tsp. curry powder
  • 1/2 tsp. salt
  • 1 (8oz) jar chutney
  • 1/2 cup chopped peanuts
  • 1/2 cup chopped green onions
  • 1/2 cup grated coconut

Directions

  1. Cream cheese together with the sherry, Worcestershire sauce, curry and salt.

  2. Line an 8" cake pan with saran wrap, or lightly grease an 8" spring ring mold. Fill pan or mold with the cheese mixture.

  3. Cover top with saran wrap or thin foil, and chill in the refrigerator for at least 4 hours. Mold can be frozen at this point. If frozen, defrost at room temperature before garnishing.

  4. Unmold cheese pate on a large platter.

  5. Garnish in layers with chutney, peanuts, green onions, and finally the grated coconut. If using a ring mold, decorate the center with curly parsley. Serve with plain crackers.
