Chinese Fried Rice

Ingredients

  • 1c. rice
  • 2 c. water
  • 1/4 c. oil
  • 2 tablespoons soy sauce
  • 1/2 c. chopped ham or salad shrimp
  • 3 eggs slightly beaten
  • 1 teaspoon salt
  • 1/4 c. pepper
  • 1/4 c. green onion chopped

Directions

  1. Cook rice in water until done about 20 minutes. Cool, if time allows let cool in fridge.

  2. Heat oil in skillet until very hot, add egg, stirring until egg is cooked, about 2-3 minutes. Break in small pieces while cooking.

  3. Add rice, meat, salt, pepper, onion and soy sauce.

  4. Blend and cook over med. heat about 8 minutes
