Oriental Chicken

Be careful not to cook chicken to long as it will dry out. Maybe check at 30 minutes.

Serves 6 people

Ingredients

  • 4-6 boneless, skinless chicken breasts
  • 1/3 c. chopped onion
  • 1/3 c. chopped celery
  • 2 tablespoons margarine
  • 1 c. uncooked rice
  • 1 can chicken broth
  • 1 can( 8 3/4 oz.) crushed pinapple drained or pinapple tidbits ( I like tidbits )
  • 6 tablespoons margarine or butter
  • Sauce:
  • 1/3 c. sugar
  • 1/8 teaspoon Accent
  • 1 teaspoon cornstarch
  • 1/4 teaspoon ground ginger
  • 1/3 c. soysauce

Directions

  1. Melt 6 tablespoons margarine in 9 × 13 pan in oven. Place chicken in pan and season with salt and pepper bake @ 350 for 45 minutes.

  2. Melt 2 tablespoons margarine in sauce pan add onion and celery. Add water and bring to a boil add rice and cook 20 minutes or until rice is done. When rice is done and chicken has cooked 45 minutes mix pinapple into cooked rice and then pour on top of chicken.

  3. In a small sauce pan combine all sauce ingredients, cookl until comes to a boil and continue cooking 1 minute.

  4. Pour sauce over rice mixture and cook in oven 15 more minutes
