Tomato-Basil Soup

Serves 4 people

Ingredients

  • 1 28 oz can crushed tomatoes
  • 1/2 14.5 oz can chicken broth
  • 9 fresh basil leaves, minced
  • 1/2 tsp sugar
  • 1/2 cup half & half
  • 1/4 cup margarine
  • Parmesan cheese

Directions

  1. In large saucepan, bring tomatoes and broth to boil.

  2. Reduce heat; cover and simmer 10 minutes.

  3. Add basil and sugar.

  4. Reduce heat to low; stir in half & half and butter.

  5. Cook until butter is melted.

  6. Top with Parmesan and serve.
