Irish Bread

Ingredients

  • BREAD:
  • 2 1/2 cups flour
  • 1 tsp baking powder
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 1/2 cup sugar
  • 1/4 cup unsalted butter, softened
  • 1 egg
  • 1 1/2 cup buttermilk
  • 1 cup raisins
  • 1 tbl. caraway seed
  • GLAZE:
  • 6 tbl. unsalted butter
  • 2 1/2 cups confectioners' sugar
  • 1/2 tsp. vanilla

Directions

  1. Heat oven to 375 degrees.

  2. Coat a 9-inch pie plate with nonstick cooking spray. Whisk together flour, baking powder, salt and baking soda; set aside.

  3. Beat sugar and butter together at medium-high speed until blended. Beat in egg. On low speed, beat in flour mixture alternately with buttermilk, ending with flour mixture. Stir in raisins and caraway seed.

  4. Pour mixture into prepared pie plate and smooth top. Bake for 30 minutes and then reduce heat to 325 degrees and bake an additional 15 minutes, or until golden brown and toothpick inserted in center comes out clean. Remove plate to wire rack to cool.

  5. In a small saucepan, melt butter over medium heat. Remove from heat and stir in confectioners’ sugar and vanilla. Add 2 tbl. warm water and stir until mixture is thick and well blended. Spread over COOLED bread.
