Earthquake Cake

Ingredients

  • 1 cup chopped pecans (I use more)
  • Generous amount of coconut
  • Yellow or Chocolate cake mix
  • 1 lb. powdered suga
  • 1-8oz cream cheese
  • 1 stick margarine or butter
  • hot fudge for chocolate cake or Carmel for yellow cake( i like Mrs. Richardson's Butterscotch Carmel)

Directions

  1. Grease and flour bottom of 9×13 pan. Line bottom of the pan with chopped pecans (or more) and coconut.

  2. In a bowl blend cream cheese until smooth, add powder sugar and butter beat until smooth.

  3. Mix1 chocolate cake or 1 yellow cake mix per instructions and pour over nuts and coconut.

  4. Drop cream cheese mixture by the spoonfuls onto the batter in the pan. Bake at 350 for 1 hour. ( I put a cookie sheet under the pan because the cake boils over.)

  5. Chill!

  6. Top with the hot fudge for the chocolate cake or the carmel for the yellow cake
