Leeks in Olive Oil

Ingredients

  • 1.5 kg leeks
  • 2-3 carrots
  • 1 handful rice
  • 3 Tbsp olive oil
  • 1 Tbsp tomato paste (for color)
  • salt to taste
  • 2 Tbsp sugar
  • 1/2 cup water

Directions

  1. Clean and wash leeks to get rid of dirt and sand.

  2. Cut them into 1 inch pieces on the diagonal.

  3. Slice carrots into ½ inch coins.

  4. Clean and wash the rice.

  5. Add the tomato paste and olive oil to a pressure cooker and cook over low heat.

  6. Add the leaks and sauté. When the leeks begin to give off a slight aroma, add the carrots.

  7. Add sugar, salt, rice and water.

  8. Cook in pressure cooker on “2” for three minutes.

  9. When you open the lid of the pressure cooker if it seems uncooked or watery cook it uncovered for a few more minutes to allow the water to be absorbed.

  10. Let cool and serve with squeezed lemon.
